Use up those old bananas to make a quick, tasty banana cake.
Once bananas start to brown they are not so attractive to many people, don't throw them out. This is the perfect time to make them into a banana cake. Bananas contain vitamin B6, vitamin C and Potassium and are a handy food source all over the world. There are many banana recipes about and the banana cake is a favorite.

- Small bowl for mashing banana
- 20 cm round cake tin
Banana Cake Ingredients
- Half a cup of light oil. (Rice bran, canola, safflower, light olive oil)
- 3/4 cup of sugar
- 1 teaspoon vanilla
- 1 egg
- 2 Ripe bananas
- 1 1/2 cups of flour
- 1 teaspoon of cinnamon
- 1/2 teaspoon of allspice
- 2 teaspoons of baking powder
- 1/4 teaspoon of baking soda
- 1/4 cup of milk. Soy milk or rice milk can be used if on a dairy free diet.
Instructions for This Easy Cake Recipe
- Preheat the oven to 180 degrees C.
- Grease a 20 cm round cake tin
- Cream the oil, sugar and vanilla until well mixed.
- Beat the egg and add to the creamed mixture, stirring until well combined.
- Mash the bananas well using a fork and add to the egg mix.
- Sift the flour and baking powder, add the cinnamon and allspice to the sifted flour.
- Dissolve the baking soda in the milk, rice milk or soy milk.
- Add the flour and milk in stages to the creamed banana mix and stir or whisk until well combined.
- Put the banana cake mix into the prepared cake tin.
- Bake for forty to fifty minutes, until a skewer comes out clean when poked into the cake.
- Leave the cake in the tin for about fifteen minutes before removing it.
- Place on a wire rack to cool.
Tasty Lemon Icing for Banana Cake
Ingredients
- 2 cups of Icing sugar
- juice and rind of one large or two small lemons.
- Cold water
Method to Make Lemon Icing for Banana Cake
- Place icing sugar in bowl.
- Grate rind of lemon finely and add to icing sugar.
- Add lemon juice to icing mixture and stir to combine.
- If the mixture is still very stiff, add water, a teaspoon at a time until icing is the consistency of very thick cream. It should not be so runny that it will run off the cake.
- If too much water is added, just add a little more icing sugar to get the right thickness.
- Using a spatula ice the cooled banana cake and decorate as wished.
Making cakes at home gives a certain feeling of accomplishment and satisfaction whilst infusing the home with the scent of freshly baked food. A freshly baked banana cake is the perfect way to impress guests, using ingredients that are readily available.
