Use up those old bananas to make a quick, tasty banana cake.

Once bananas start to brown they are not so attractive to many people, don't throw them out. This is the perfect time to make them into a banana cake. Bananas contain vitamin B6, vitamin C and Potassium and are a handy food source all over the world. There are many banana recipes about and the banana cake is a favorite.

  • Small bowl for mashing banana
  • 20 cm round cake tin

Banana Cake Ingredients

  • Half a cup of light oil. (Rice bran, canola, safflower, light olive oil)
  • 3/4 cup of sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 2 Ripe bananas
  • 1 1/2 cups of flour
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of allspice
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 cup of milk. Soy milk or rice milk can be used if on a dairy free diet.

Instructions for This Easy Cake Recipe

  1. Preheat the oven to 180 degrees C.
  2. Grease a 20 cm round cake tin
  3. Cream the oil, sugar and vanilla until well mixed.
  4. Beat the egg and add to the creamed mixture, stirring until well combined.
  5. Mash the bananas well using a fork and add to the egg mix.
  6. Sift the flour and baking powder, add the cinnamon and allspice to the sifted flour.
  7. Dissolve the baking soda in the milk, rice milk or soy milk.
  8. Add the flour and milk in stages to the creamed banana mix and stir or whisk until well combined.
  9. Put the banana cake mix into the prepared cake tin.
  10. Bake for forty to fifty minutes, until a skewer comes out clean when poked into the cake.
  11. Leave the cake in the tin for about fifteen minutes before removing it.
  12. Place on a wire rack to cool.

Tasty Lemon Icing for Banana Cake

Ingredients

  • 2 cups of Icing sugar
  • juice and rind of one large or two small lemons.
  • Cold water

Method to Make Lemon Icing for Banana Cake

  1. Place icing sugar in bowl.
  2. Grate rind of lemon finely and add to icing sugar.
  3. Add lemon juice to icing mixture and stir to combine.
  4. If the mixture is still very stiff, add water, a teaspoon at a time until icing is the consistency of very thick cream. It should not be so runny that it will run off the cake.
  5. If too much water is added, just add a little more icing sugar to get the right thickness.
  6. Using a spatula ice the cooled banana cake and decorate as wished.
